Indian filter coffee is also known by two different names, kappi and the other one is South filter coffee, which is an integral part of South Indian culture. This unique Indian coffee-making includes a slow brewing process using a metal filter that results in a strong, aromatic drink that is served with milk and sugar.

The coffee is made from a blend of Arabica beans and chicory, which enhance the delightful, delicious flavor and aroma. The origin of Indian filter coffee is traced back to the 17th century when coffee was first introduced in India by Mysore ruler Baba Budan. The traditional South Indian coffee filter consists of two parts: the upper part consists of coffee grounds, and the lower part consists of brewed coffee. Two cylindric chambers hold coffee beans and brewed coffee, in other words.

Indian filter coffee also gained popularity outside the country in different parts of the world: the United States, Canada, the United Kingdom, Australia, and many more places in the world.

Indian Filter Coffee Recipe: Step by Step

Ingredients:

1/2 cup water

1/4 cup coffee granules (80% coffee, 20% chicory)

Milk (as required)

Step 1: Boil the Water
Start by taking 1/2 cup of water in a vessel and bringing it to a rolling boil. Allow it to boil properly while you prepare the coffee mixture.

Step 2: Prepare the Coffee Mixture
Take 1/4 cup of coffee granules, maintaining the ratio of 80% coffee and 20% chicory, and place them in a container. You can use a transparent container or any container of your choice.

Step 3: Use the Coffee Presser
Take an authentic 3-layer coffee presser, which is ideal for making this type of coffee. Separate the compressor from the presser and keep it aside for later use.

Step 4: Set Up the Filter
Take a clear, transparent bowl and attach a filter to it. Place a muslin cloth over the filter, which will help in collecting the fine decoction once the coffee is pressed.

Step 5: Press the Coffee Granules
Add the coffee granules to the presser and press them gently but steadily up to three times. Do not exceed three presses, as this process ensures that the granules release the authentic flavor.

Step 6: Transfer to Muslin Cloth
After pressing, transfer the finer coffee granules onto the muslin cloth placed over the filter. This step ensures that the coffee is ready for the boiling water.

Step 7: Pour Boiling Water
Once the water is boiled, pour it slowly and steadily over the coffee granules in the muslin cloth. Let the water seep through the granules naturally, allowing the decoction to collect in the transparent bowl below.

While the decoction is being collected, boil the required amount of milk in a separate vessel. Ensure the milk is heated properly for the best taste.

Pour the collected coffee decoction into glasses and add the hot, boiled milk to the coffee. Stir gently to mix the flavors, maintaining the authentic taste.
